Jerk Salmon Bites

🧾 Ingredients (Serves 2–3)

Salmon

  • 450 g salmon fillet (1 lb), skin removed, cut into 2.5 cm cubes (1-inch)

  • 15 ml olive oil (1 Tbsp)

  • 10 ml fresh lime juice (2 tsp)

Jerk Spice Blend (Homemade & Adjustable)

  • 5 ml garlic powder (1 tsp)

  • 5 ml onion powder (1 tsp)

  • 5 ml dried thyme (1 tsp)

  • 2.5 ml smoked paprika (½ tsp)

  • 2.5 ml allspice (½ tsp)

  • 1.25 ml ground cinnamon (¼ tsp)

  • 1.25 ml black pepper (¼ tsp)

  • 1.25 ml sea salt (¼ tsp, adjust to taste)

  • Optional heat: cayenne or crushed red pepper, to taste

Optional Finish (choose one)

  • Maple-Lime Glaze: 15 ml maple syrup (1 Tbsp) + extra lime juice

  • Garlic Citrus Oil: olive oil + fresh garlic + lime zest

🔥 Air Fryer Instructions (Fast & Crispy)

  1. Preheat air fryer to 200°C (400°F) for 3 minutes.

  2. Pat salmon dry with paper towels (this helps crisping).

  3. In a bowl, toss salmon with olive oil, lime juice, and jerk spices until evenly coated.

  4. Arrange salmon in a single layer in the basket.

  5. Air fry for 6–8 minutes, shaking halfway.

    • Salmon is done at 63°C (145°F) and flakes easily.

  6. Finish with your optional glaze or oil and serve immediately.

🔥 Oven-Baked Instructions (Great for Larger Batches)

  1. Preheat oven to 220°C (425°F).

  2. Line a baking sheet with parchment paper or foil.

  3. Prepare salmon as above and spread pieces evenly, leaving space between cubes.

  4. Bake for 10–12 minutes, then switch to broil (grill) for 2–3 minutes to crisp edges.

  5. Remove promptly to prevent drying out; finish with glaze if using.

💧 How to Keep Salmon Moist (Especially Important for Baking)

  • Use oil + citrus—acid helps tenderize while oil locks in moisture.

  • Do not overcrowd (crowding = steaming).

  • Pull salmon as soon as it flakes; carryover heat finishes cooking.

  • For lean cuts, brush lightly with oil after cooking, not before serving.
